Raicilla has been produced in the state of Jalisco for over 400 years, but it’s little known outside the region famous for Tequila. Raicilla’s rebellious makers refused to pay taxes levied by the Spanish government, which forced the distillation and consumption underground where it was only known to locals or stumbled upon by travelers adventurous enough to step off the well-worn path.
